Each of our bottles begins long before pressing: it takes shape in the meticulous selection of the olives.

We harvest our drupes with targeted methods that respect the fruit: hand rakes for the most delicate varieties, electric facilitators for the others. We avoid any invasive technique that could damage the plant or compromise the quality of the olive.

When we purchase olives from third parties, we work exclusively with trusted olive growers, chosen for their agronomic quality and alignment with our principles: each olive must be healthy, whole and often grown according to rigorous organic practices.

Time, in this process, is a vital variable.

The olives are transported to the mill within a few hours, in ventilated boxes, to avoid fermentation or oxidation. This is where the quality takes shape. Each variety is milled separately, thoroughly known, and constantly monitored.

Each step — harvest, extraction, filtration — is monitored with the same precision as a laboratory: crushing with knives, kneading in an inert atmosphere, cold filtration with cellulose cardboard to ensure stability over time. There is nothing random.

Every degree, every rotation, every second is chosen, nothing is left to chance.
