In cooking it is probably the second most used ingredient after salt. The lemon is not a seasonal ingredient as it is available all year thanks to the numerous international variations. However, when the lemons are in season it is worth focusing on the Italian ones, and in particular those of Amalfi, Sorrento and neighboring areas, which are characterized for their sweetness and their enveloping perfume.
Lemon citrus oil is made mainly through the simultaneous co-pressing of lemons and olives. The result is an oil that retains all the flavors, aromas and properties of the essential oils present in the peel without the acidic hints of the juice.
Dressing with a refined and unmistakable flavor, it is ideal for all uses raw, on white meats, salads, fish dishes and white pasta such as tagliolini with courgettes.
