The Processing

The extraction technique adopted is a continuous cycle with the introduction of patented innovations that allow to manage at best all the processing parameters: times, temperatures, oxygen concentrations.

The processing temperatures are kept below 25 °, the times are optimized according to the cultivars and the oxygen concentrations managed automatically. Eighteen hectares of property are in which are grown the classic varieties of the area, Frantoio and Leccino.

The oil obtained from it is an oil with a pleasantly bitterish and spicy flavor with hints of field grass and wild thistle. Rich of polyphenols and vitamin E, it guarantees a continuous supply of precious antioxidant substances, able to counteract the action of free radicals.
